The Office Support page provides all the necessary information about organization charts. Access the support page and read the instructions. You will have the possibility to learn the way these organization charts work and how to add various graphic elements to the created charts.
First of all make sure you have inserted the header or footer correctly. You can do this by clicking on the File tab > Print > Print Preview, then Apply footer/header command using the Header & Footer button. You may also want to check if your printer's driver is correctly installed and Visio can detect your printer properly.

There are several things that you can do to make the organization chart smaller. You can try to modify the margins of page by going to File > Print Preview. From there you can adjust the margins, choose the paper type, its orientation (landscape or letter) and other settings. Also, try to make the chart smaller by selecting it, and from a corner, when the cursor is changed to two side arrow one, drag the margin. You should be able to match the chart to a single page.
